His name is Toby Jones. He’s the mastermind behind Jones & Son Bespoke BBQ. Not only that, he’s a burger wizard and a pulled pork king.
Toby is the mastermind behind Jones & Son, a travelling food stall that serves pulled pork rolls and classic, meaty burgers. You might be sitting there thinking, “Pulled pork and burgers. Standard”. Well you better push those assumptions aside because there is NOTHING standard about this joint. And FYI, I don’t use the words “wizard” and “king” lightly.
Firstly, the pulled pork roll. Oh how the foodie gods have blessed the city of Edinburgh. The pulled pork roll is an absolute game changer for anyone who likes soft, juicy, get-in-my-belly meat. Picture this: a soft brioche bun, homemade slaw, slow-smoked pulled pork, and chilli jam. The chilli jam is a thing of beauty. Homemade by Toby, it adds the perfect sweet tang to the meat. When he asks, “Would you like chilli jam on that?”, the answer is ALWAYS a resounding “yes”. It’s criminal to skip the chilli jam.
Though be warned, this pulled pork roll will ruin you. It has certainly ruined me. I can’t look at another pulled pork roll without asking myself, “Could this one be nearly as good as Toby’s?”. It never is. This is my curse. Jones & Son reign safely at number 1 in the pulled pork category. Apart from the grade A chilli jam weapon, the secret may very well be in the smoker, which is made by the Jones & Son team themselves. The pulled pork is smoked for hours upon hours, until the meat simply falls apart. It’s an art form which these guys have nailed.
When he’s not layering fresh slaw, pulled pork, and chilli jam on a roll, you can find Toby assembling succulent, flavourful burgers. Classic cheeseburgers, double cheeseburgers, BLTs, and black pudding cheeseburgers sit comfortably on the menu. The winner for me is the BLT cheeseburger – the freshly sizzled bacon bathes in a healthy drizzle of chilli mayo to make this burger a fan favourite.
And if you’re lucky, Toby is serving both pulled pork rolls and burgers at the same time, which means that you can get one of each. This is highly recommended and I’ve done it on several occasions. You will not be judged, only rewarded with complete taste bud satisfaction. Honestly, I’d judge you for not taking advantage of this pork-burger tag team.
Jones & Son are a culinary show on the road in the Edinburgh area. In other words, they frequent local markets, street food events, and pop-up festivals. The best way to know where they’ll be next is to obsessively stalk their Facebook page. I do. All the time. I’d say it’s a worthy use of my time.
